Ayam Mentera Semerah Padi
(Aka Ayam Masak Merah)
Preparing the chicken :
Cut whole chicken in small parts and pre-fry with marination of tumeric powder, chilli powder and salt. Cook till brown and set aside (meat can be half cooked). Use same oil to cook the sambal as follows.
Blended ingredients (Part 1)
Onions 2 medium
Garlic 4cloves
Ginger 2inches
Lemongrass 2x
Galangal 2inches
Blended ingredients (Part 2)
Fresh chillies
Dried chillies (boiled and seeded)
(Please use estimation for the amount of chillis)
Heat oil in wok and fry part 1 until oil separates and add in
Cinnamon stick 1x
Blended ingredients part 2
Tomato purree 1/2 - 1 box (use estimation)
Salt and sugar to taste
A cube of chicken stock
Fry the above ingredients until well cooked, then add
1-2 tablespoon Apple Cider Vinegar
Add fried chicken and coat well with sambal. Add some water and cook covered on medium heat for about 20 minutes.
Once done, serve with chopped corianders, green chillis, sliced onions as garnish! Enjoy!
